Zucchini Sausage Soup

The simple perfect fall soup! Serve with your baguette and dairy free parmesan :)


Ingredients:

1 lb hot Italian sausage - no casing - cut into bite size pieces

2 cups celery, chopped

2 cups zucchini, cut into bite size pieces

1 onion, chopped

1can 28 oz tomatoes

1 can 28 oz diced tomatoes

2 tsp salt

1 tbsp Italian seasoning

1 tbsp oregano

1 tbsp garlic powder

1 tbsp sugar

1 tbsp basil

2 cups green pepper, chopped


Directions:

Brown sausage, add celery and onion till soft.

Place sausage, celery, onion in cooking pot.

Add remaining ingredients, except green pepper.

Simmer 40 minutes.

Add green pepper, simmer additional 10 minutes .


Top with parmesan cheese if you like!

Serve with baguette!
