Sweet Potato and Ground Turkey Bake - Gluten Free Dairy Free

Is your New Year’s resolution to eat healthy?  I have a perfect recipe for you.  This is an easy delicious meal that has protein, complex carbohydrates, and fiber.  The great bonus is it’s allergy friendly.  I got this delicious recipe from Wellness by Kay (Ground Turkey Sweet Potato Bake - Wellness by Kay). 

Hope you enjoy the recipe as much as I do :) 


Ingredients: 

1 lb ground turkey 

3-4 small to medium sweet potatoes, peeled and cubed

2 small zucchinis, cubed, cut in quarters 

2 tsp garlic powder 

3 rosemary sprig, chopped which is about 1-2 tsp of rosemary

1 tsp salt 

1 tsp pepper 

Olive oil 

¾ cup dairy free parmesan cheese shredded, I use the Follow Your Heart brand.

9 x 9 baking dish 



Directions:

  1. Preheat the oven to 400 F degrees.

  2. Grease the baking dish with olive oil and add the cubed sweet potatoes.  Add 1 tsp garlic powder, 1 tsp rosemary, ½ tsp salt, and ½ tsp pepper.  Stir well.

  3. Bake for 30 minutes. 

  4. While the sweet potatoes are baking, add the ground turkey to a medium - high skillet.  Cook the ground turkey and add the remaining spices (garlic powder, salt, pepper, and rosemary). 

  5. After the sweet potatoes are done, add the cubed zucchini and cooked ground turkey.  Stir evenly. 

  6. Bake for 10 minutes. 

  7. After 10 minutes, add the dairy free parmesan cheese to the dish and stir evenly. 

  8. Bake for 10 minutes. 

  9. Serve warm and top with more parmesan cheese.
