Yogurt Oatmeal Cups - Gluten Free Dairy Free

The perfect brunch recipe that you can make ahead, and the guest will love.  Also, a great breakfast meal prep option for the week. I got this recipe from the Domestically Speaking website and made the recipe gluten free and dairy free.

Ingredients: 

This recipe makes 6 oatmeal cups.

1 ½ cup gluten free instant quick cooking oats, I use Bob’s Red Mill brand.  Make sure the oats are certified gluten free.  Oats can contain gluten through cross contamination.

1/4  cup (1 small container) unsweetened apple sauce 

1 tsp cinnamon

½ tsp salt 

2 tbsp maple syrup 

2 containers (5.3 oz each) dairy free yogurt, I use So Delicious and Silk brands.

Blueberries and strawberries for toppings

 

Directions:

  1. Preheat the oven to 350 F.

  2. In a medium mixing bowl, add the oats, apple sauce, maple syrup, and cinnamon. Stir until mixed together well. 

  3. Add to a greased muffin tin.  Use a spoon or your hands to make a cup formation in each muffin spot. 

  4. Cook for 12  mins.  Then let cool for 10 mins.

  5. Use a spatula or knife to get out the oatmeal cups. 

  6. Add the yogurt and top with fruit. Serve.
