My friend made this recipe for a weekend getaway and it was the perfect make ahead breakfast. I asked her for the recipes so I could make it gluten and dairy free. Thank you Joyous Apron for the great recipe! Berry French Toast Casserole (Make Ahead Overnight) - Joyous Apron
Ingredients:
12-14 cups gluten free french toast bread, cubed. I use the schar brand. Also, you can use a gluten free baguette if needed.
8 eggs
2 cups oat milk unsweetened and original. You can use any unflavored dairy free milk
2 tsp vanilla extract
1 tsp cinnamon
⅔ cup brown sugar
1 cup strawberries, sliced
½ cup blueberries
1-2 tbsp powdered sugar
Maple syrup to add when you serve
9 x 13 casserole dish
Directions:
Add the cubed gluten free french toast bread to the greased 9 x 13 casserole dish.
In a large mixing bowl, add the eggs, milk, brown sugar, vanilla extract, and cinnamon. Whisk together and pour over the bread.
Add the sliced strawberries and blueberries to the top.
Cover and refrigerate for 4 hours or overnight.
Preheat the oven to 350 F.
Bake for 35 - 50 minutes. Cook until the egg is cooked through.
Top with powdered sugar.
Serve warm with maple syrup.
