Berry French Toast Casserole - Gluten Free Dairy Free

My friend made this recipe for a weekend getaway and it was the perfect make ahead breakfast. I asked her for the recipes so I could make it gluten and dairy free. Thank you Joyous Apron for the great recipe! Berry French Toast Casserole (Make Ahead Overnight) - Joyous Apron
Ingredients:
12-14 cups gluten free french toast bread, cubed. I use the schar brand. Also, you can use a gluten free baguette if needed.
8 eggs
2 cups oat milk unsweetened and original. You can use any unflavored dairy free milk
2 tsp vanilla extract
1 tsp cinnamon
⅔ cup brown sugar
1 cup strawberries, sliced
½ cup blueberries
1-2 tbsp powdered sugar
Maple syrup to add when you serve
9 x 13 casserole dish
Directions:
- Add the cubed gluten free french toast bread to the greased 9 x 13 casserole dish. 
- In a large mixing bowl, add the eggs, milk, brown sugar, vanilla extract, and cinnamon. Whisk together and pour over the bread. 
- Add the sliced strawberries and blueberries to the top. 
- Cover and refrigerate for 4 hours or overnight. 
- Preheat the oven to 350 F. 
- Bake for 35 - 50 minutes. Cook until the egg is cooked through. 
- Top with powdered sugar. 
- Serve warm with maple syrup.
