Omelet Bites - Gluten Free Dairy Free

This is one of the best make ahead breakfast recipes. We are heading to a cabin this weekend for a little getaway and obviously I had to make these. They are so simple and you can easily make your own version of them.


Serving: 12 bites

Ingredients:

½ small package Italian hot sausage, cooked

6 pieces of bacon, cooked and chopped

1 package dairy free cheese, I use Follow Your Heart mozzarella shredded cheese

6 eggs

1 cup dairy free milk, I use the Almond Breeze original unsweetened

½ green pepper, chopped

1 tsp garlic powder

1 tsp onion powder

1 tsp pepper



Directions:

  1. Preheat the oven to 350 F.

  2. Grease a muffin tin. Add dairy free cheese to the bottom. Bake for about 5 -7 minutes.

  3. Add the filling (bacon, Italian sausage, green pepper) to the muffin tin.

  4. In a small bowl, add the milk, eggs, and seasoning. Whisk together.

  5. Pour the egg mixture into the muffin tin. Bake for 20 - 25 minutes.

  6. Let cool then store in a tupperware container in the fridge until ready to serve. Pop the omelet bites in the microwave for a minute and serve.
