It’s soup season!! This recipe is so easy and I actually had everything in my pantry so it’s common ingredients. Also, it pairs perfectly with a grilled cheese sandwich and diet soda! I made the grilled cheese with Canyon gluten free bread and Violife cheddar cheese. The diet coke was made by my Soda Stream.
Tomato soup and grilled cheese is a classic meal and perfect for the fall weather!!

Ingredients:
28 oz can tomatoes crushed
2 tbsp dairy free butter, I use the Earth Balance brand.
½ medium onion, chopped
4 cloves garlic, minced or 3 tbsp minced garlic
2 tsp red pepper flakes
¾ cup broth, I use Kettle and Fire brand. You can use chicken broth, bone broth, vegetable broth. Make sure to check the ingredients. Broth is an item that has hidden gluten in it.
4 tbsp dairy free milk, I use almond milk by Malk brand.
Salt and pepper to taste. I use about 1 tsp of each.
Blender
Directions:
In a large pot, add 1 tbsp butter and chopped onion. Cook the onion until they are almost translucent then add the garlic. Cook until the garlic is slightly golden.
Add the can of crushed tomatoes, red pepper flakes, and broth.
Let simmer for 10 minutes.
Remove from heat and let cool.
Once cooled, add to the blender. Blend until smooth.
Put the tomato soup back into the pot with medium heat.
Add the almond milk and melted butter. Stir until evenly mixed.
Serve warm with grilled cheese.
