Sweet Potato BBQ Chicken Casserole - Gluten Free Dairy Free

Honestly, we had left over BBQ chicken from the weekend and we had sweet potatoes that needed to be used. Therefore we came up with this recipe and it turned out delicious! It’s super easy to make too.


Ingredients:

1 jar BBQ sauce, my favorite is the G Hughes brand.

2 - 3 chicken breasts

4 sweet potatoes, peeled and cubed

½ bag dairy free cheese, I use the Daiya brand mozzarella.

1 red onion, sliced

Olive oil

Salt and pepper to taste



Directions:

  1. In a crockpot, place the chicken and ½ - ¾ jar of BBQ sauce. Stir so the sauce is evenly distributed on the chicken breasts. Cook on high for 4 hours. Honestly, you could use a rotisserie chicken and coat with BBQ sauce.

  2. Preheat the oven to 400 F.

  3. Add the cubed sweet potatoes to a greased casserole dish. Drizzle the sweet potatoes with olive oil and salt and pepper to taste. Stir.

  4. Bake the sweet potatoes for 20 mins.

  5. While baking, prep the chicken by shredding it and slicing the onion.

  6. Once sweet potatoes are slightly softened, add half sliced onion, add chicken, add a little BBQ sauce on top, add shredded cheese, top with the rest of the onion and BBQ sauce.

  7. Bake for 10 minutes for the cheese to melt and sweet potatoes to soften a little more.

  8. Serve warm.
