Orange Chicken - Gluten Free Dairy Free

Ingredients:


Chicken:

3 medium boneless chicken breasts

1 tbsp ginger

1 tsp sesame oil

1 egg white

1 tbsp soy sauce, make sure it's gluten free

½ - ¾ cups coconut flour


Sauce:

2 cups orange juice

¼ cup broth, I use chicken broth

½ cup soy sauce, make sure it is gluten free

2 tbsp brown sugar

2 tsp garlic powder

½ tbsp orange zest

½ tsp pepper

1 tbsp cornstarch

1 tbsp ginger

Topping: sesame seeds



Directions:

  1. Cut the chicken breasts into equal sizes.

  2. In a large mixing bowl add the chicken, ginger, soy sauce, egg white, sesame oil. Stir until evenly coated.

  3. On a plate or small mixing bowl add the coconut flour.

  4. Place the evenly coated chicken into the coconut flour and roll until evenly coated. Do this for all the chicken bites.

  5. Add the coated chicken and spray with cooking spray. Cook at 400 F for 7 minutes then flip and cook at 350 F for 9- 10 minutes.

  6. In a medium mixing bowl, add the above sauce ingredients and stir.

  7. In a large skillet on low to medium heat add the sauce ingredients. Let simmer until thicken.

  8. Add the cooked chicken and stir until coated.

  9. Serve the orange chicken over rice and top with sesame seeds.
