This is a great recipe with an easy clean up!
Ingredients:
1 ½ lb boneless chicken breast, cubed
1 onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
3 tbsp Tex Mex seasoning, I use the Rachel Beller Nutrition brand. You can also use taco seasoning. Make sure the taco seasoning is gluten free and dairy free. Check my taco seasoning Tuesday tip for suggestions. :)
Olive oil
Salt and pepper to taste
Directions:
Preheat the oven to 400F.
Add sliced onion, red pepper, yellow pepper to a bowl. Drizzle olive oil on the veggies and add about 1 ½ tbsp of Tex Mex seasoning. Stir well so evenly coated.
Add cubed chicken to another bowl. Drizzle olive oil on the chicken and add 1 ½ tbsp of Tex Mex seasoning. Stir well.
Add the chicken and veggies to a greased baking pan. Make sure nothing is overlapping.
Bake for 20 -25 minutes until the chicken has the temp. of 165 F.
Serve with corn tortillas, salsa, and guacamole.
