Gluten Free Dairy Free - Stuffed Peppers

Super simple and delicious dinner or lunch option. Helpful Hint: Be sure to check the ingredients on the taco seasoning. Some gluten free taco seasonings have dairy in it. My go to brand is Siete.


Ingredients:

2 full peppers

1 package of lean ground turkey, I use about 3 cups

1 package of Siete Taco Seasoning

1 cup of Daiya Mexican Cheese, you can also use Follow Your Heart cheese



Directions:

  1. Preheat oven to 350F.

  2. Brown the turkey in skillet on medium - high heat.

  3. Add the Siete taco seasoning to the almost browned turkey.

  4. Cut the peppers in half and remove the seeds.

  5. Grease baking sheet.

  6. Add the peppers to the baking with the open side up.

  7. Add the cooked turkey.

  8. Top the peppers with the Daiya Mexican cheese.

  9. Cook for 10 - 15 minutes until the Dairy Free cheese melts.
