Gluten Free Dairy Free - Cucumber Onion Salad

This is such a refreshing salad to enjoy anytime throughout the year. An added bonus is using a fresh cucumber from your garden if possible! This is my quick “go to” side salad to bring to any event. Hope you enjoy this salad as much as I do!


Ingredients:

2 cucumbers

1 red onion

1 cup white distilled vinegar

1/2 cup sugar

1/2 cup water

2 tablespoons dill

Salt to make the cucumber sweat



Directions:

  1. Combine sugar, water, white distilled vinegar in a pot on medium-high heat.

  2. Cook until the sugar dissolves.

  3. Cut the cucumbers in circle slices and the onion in long slices.

  4. Pour the liquid ingredients onto the cucumbers and onions.

  5. Refrigerate for at least 1 hour before serving.
