Buffalo Chicken Patties - Gluten Free Dairy Free

I used to love chicken patties as a kid but unfortunately most store-bought ones have gluten or dairy in them. So I decided to make a “my” version of a chicken patty! Thankfully Pinterest is always helpful when finding recipes so I went off of https://thewoodenskillet.com/buffalo-chicken-burgers/ recipe.

Ingredients:

1 lb ground chicken

1 egg, I use cage free eggs. Supposedly they are better for you.

½ cup almond flour, I use the King Arthurs Baking Company brand.

1 tbsp dairy free butter, cut in cubes. I use the Smart Balance sticks.

¼ cup celery, chopped

½ tsp pepper

½ tsp salt

1 tsp garlic powder, you could substitute this with chives if you are on the Low Fodmap diet and disregard the onion powder.

1 tsp onion powder

1 tbsp buffalo sauce, check the ingredients in your buffalo sauce sometimes there is hidden gluten and dairy. I use the Market District Buffalo Sauce. That’s what my grocery store has. Primal Kitchen is another good brand but a little expensive.

Butter lettuce and Dairy free ranch, to serve with your patties. I use the Hidden Valley Dairy Free ranch.



Directions:

  1. Add all the ingredients into a large mixing bowl. Stir so it is all mixed together.

  2. Form patties with the chicken mixture. Ideally let the patties sit in the fridge for at least 30 minutes. This will help them keep their form.

  3. Add olive oil to a skillet on medium to high heat. Once the skillet is hot, add the patties. Cook all the way through.

  4. Serve on butter lettuce with your buffalo sauce and dairy free ranch.
