Gluten Free Dairy Free - Broccolli Cheddar Soup

Takes less than an hour to make and plenty of food for multiple helpings. Also if you love cheese, you will love this soup!


Ingredients:

½ yellow onion, diced

3-4 garlic cloves, minced or 3 tbsp of minced garlic

32 oz vegetable broth, I use the Nature’s Basket brand.

16 oz broccoli florets

1 cup cashews, softened

1 can (13.5 oz) coconut milk

2 packages (7.1 oz) Dairy Free cheddar cheese, I use the Daiya brand.

½ cup unsweetened plant-based milk or almond milk



Directions:

  1. First soften the onion in the pot.

  2. Add the garlic and sauté.

  3. Microwave the raw cashews in a bowl with water for 1 minute.

  4. Add cashews, 1 cup of vegetable broth, 2 cups of cheddar cheese, coconut milk to a blender. Blend until smooth.

  5. Add the blended mixture to the pot with the onion and garlic.

  6. Add the remainder of the Dairy Free cheese and broccoli.

  7. Let simmer for 15 minutes.

  8. After 15 minutes stir and let simmer for additional 20 minutes.

  9. Stir and see if the broccoli has softened. If not, continue in increments of 10 minutes until broccoli is softened and cheese has melted.
