Gluten Free Dairy Free - Bean Salsa It Up

This dip is always a big hit at family and friend get togethers. The bonus is that it is healthy for you too. :) Hope you enjoy!


Ingredients:

1 red pepper, diced

1 can of sweet yellow corn

1 can of black eyed peas, rinsed and drained

1 can of black beans, rinsed and drained

3 avocados

6 cherry tomatoes, diced

1 cup celery, chopped

1 medium red onion, diced

1/2 cup cilantro

1 jalapeno pepper

1/3 cup olive oil

2 tbsp lime juice

2 tbsp red wine vinegar

1 tsp sugar

1/4 tsp garlic powder

1/2 tsp salt

1/2 tsp pepper


Directions:

  1. In large bowl, combine black beans, black eyed peas, sweet corn, red pepper, red onion, jalapeno pepper, celery, tomatoes, avocado, and cilantro.

  2. In small bowl, combine olive oil, lime juice, sugar, red wine vinegar, salt, pepper, garlic powder.

  3. Pour the liquid mixture into the large bowl and stir well.

  4. Refrigerate until it's time to serve.
