I see all these diners that have these delicious pancakes so I thought why not try to make them gluten free and dairy free. This is a simple recipe and most of the ingredients you already have in your kitchen. For all those chocolate lovers, this recipe is more chocolate than banana tasting!
Ingredients:
1 ripe banana, mashed
1 tbsp maple syrup
2 eggs
1/2 stick (8 tbsp) of Dairy Free butter, I used Smart Balance
2 cups of Dairy Free milk, I used unsweetened original Almond Milk
1 tbsp of baking powder
2 1/4 cups of All Purpose Gluten Free flour
1/2 cup of Dairy Free chocolate chips

Directions:
Combine all the wet ingredients and mix.
Add the dry ingredients (baking powder and Gluten Free flour).
Add cooking spray to a medium - high heated skillet.
Use approximately 1/2 cup to measure out the batter into the skillet.
Flip the pancake once it is bubbling. It's about 1 minute and 30 seconds each side once the skillet is hot.
Serve with Dairy Free butter and pure maple syrup.
