Ingredients:
3 ripe bananas, mashed
2 tbsp coconut oil
1 egg, beaten
1 tsp vanilla extract
1 1/2 cups Gluten Free All Purpose Flour, I use Bob's Red Mill brand
2 tbsp unsweetened vanilla Almond Milk
1/3 cup brown sugar
1 tsp cinnamon
1/4 tsp salt
1/2 cup Dairy Free semi-sweet chocolate chips, I use Enjoy Life brand
Directions:
Preheat oven to 350 F.
Grease 8x8 inch pan with baking oil spray.
In large bowl, combine mashed bananas, coconut oil, unsweetened vanilla Almond milk, vanilla extract, egg, brown sugar. Stir.
In the same bowl, add the cinnamon, baking soda, salt, Gluten Free All Purpose flour. Stir.
Fold in the Dairy Free chocolate chips into the batter. "This reminds me of the fold in the cheese from Schitt's Creek" LOL
Pour batter into the greased 8x8 inch pan.
Cook for 20 - 25 minutes. Use the toothpick test to make sure the batter is cooked all the way through.
Let cool and cut into little rectangles.
