Breakfast Omelet with Lox and Spinach - Gluten Free Dairy Free

I got this idea when I was in Nashville. A restaurant where we had brunch had a version of this and it was so delicious!

This is the perfect low carb, high protein breakfast and takes under 10 minutes to make.


Ingredients:

2 eggs

1 piece of smoked salmon/lox

Small handful of spinach or greens

Bonus- add an avocado or guacamole


Directions:

  1. Cook the eggs until half done.

  2. Add the spinach and smoked salmon.

  3. Fold the eggs over the spinach and smoked salmon.

  4. Cook until the eggs are to your liking.

  5. Top with avocado or guacamole.
