Bacon Chicken Jalapeno Stuffed - Gluten Free Dairy Free

This is a simply delicious meal and the prep is quick! The perfect easy dinner that tastes fantastic! Hope you all enjoy!!


Ingredients:

2 boneless chicken breasts

½ cup Dairy free cream cheese, I use the Daiya brand

¾ cup Dairy free shredded cheddar cheese, I use Daiya brand

½ cup jalapenos, chopped. I use approximately 2 medium sized jalapenos

4 slices of low sodium bacon

¼ teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon pepper



Directions:

  1. Preheat the oven 375 F. Grease the baking pan.

  2. In a small bowl, combine the cream cheese, cheddar cheese, jalapenos. Stir well.

  3. Slice the chicken in the middle. Don’t slice all the way through. You want to make a little pocket in the chicken.

  4. Add the cream cheese mixture into the “pockets” of the chicken.

  5. Wrap 2 slices of bacon around the chicken breasts.

  6. Cook for approximately 30 - 35 minutes.

  7. Serve warm.
