Ingredients:
1 (10.6 oz) package of Organic Chickpea Risoni or Gluten Free orzo
1 (9 oz) package sugar snap peas
1 cup water chestnuts, drained and chopped
3 green onions, chopped
3 cups diced cooked chicken
1 medium red bell pepper, diced
1/2 cup slivered almonds, toasted
1/2 cup vegetable oil
3 tbsp rice vinegar
2 tbsp Gluten Free soy sauce

Directions:
Cook the organic chickpea risoni and drain well.
In large bowl, combine organic chickpea risoni, water chestnuts, green onions, red pepper.
In small bowl, combine vegetable oil, vinegar, Gluten Free soy sauce. Stir well.
Pour the liquid mixture in the large bowl. Stir well.
Add in the almonds and stir.
Place in fridge and serve chilled.
